Seasonal recipes to make the most of summer produce
British summers are short, so it's worth making the most of the produce that's actually in season — it tends to be cheaper, fresher, and better tasting than anything shipped in from further afield.
A simple tomato and stone fruit salad, dressed with good olive oil and a squeeze of lemon, takes ten minutes and barely needs a recipe. Let the ingredients do the work.
For something more substantial, a traybake of new potatoes, courgettes, and peppers roasted with herbs is an easy way to feed a family without much washing up.
And if you're grilling, marinate ahead of time — even twenty minutes in oil, garlic, and citrus makes a noticeable difference to flavour before anything goes near the barbecue.
